Because I am always looking for new ideas to cook, I thought I'd start sharing some things that I make - when they turn out. I decided this after enjoying dinner today. This is from the Pillsbury One-Dish Cookbook (one of my very favorite).
Easy Taco Casserole
6 servings
1 lb ground beef
3/4 c chopped onions
1 (1 1/4-oz) pkg. taco seasoning
3/4 c water
1 (16-oz) can refried beans
1 (8-oz) jar taco sauce
2 1/2 c crushed tortilla chips
7 oz. (1 3/4 c) shredded Cheddar cheese
1 1/2 c shredded lettuce
1/2 c chopped tomatoes
1. Heat oven to 400 degrees. In medium skillet, cook ground beef and onions over medium-high heat until beef it thoroughly cooked. Drain. Stir in taco seasoning mix and water; simmer 10 minutes.
2. In medium bowl, combine refried beans and taco sauce. In ungreased 8-inch square (2-quart) baking dish, layer 1/2 the bean mixture, 1/2 the beef mixture, 2 cups tortilla ships and 1 cup of the cheese. Top with remaining bean mixture and beef mixture.
3. Bake at 400 degrees for 25 minutes. Remove from oven. Top with remaining tortilla chips and cheese. Return to oven; bake and additional 3 to 5 minutes or until cheese is melted. Serve with lettuce and tomatoes.
This was easy to make and I did enjoy it. Hope anyone else who might try it likes it to!
