Chicken Caesar Tetrazzini (from America's Best Brand-Name Recipes Quick & Easy Weeknight Favorites)8 ounces uncooked spaghetti
2 cups shredded or cubed cooked chicken
1 cup chicken broth
1 cup HIDDEN VALLEY RANCH Caesar Dressing
1 jar (4 1/2 ounces) sliced mushrooms, drained
1/2 cup grated Parmesan cheese
2 tablespoons dry bread crumbs
Cook spaghetti according to package directions. Drain and combine with chicken, broth, dressing, and mushrooms in a large mixing bowl. Place mixture in a 2-quart casserole. Mix together cheese and bread crumbs; sprinkle over spaghetti mixture. Bake at 350 F for 25 minutes or until casserole is hot and bubbly. Makes 4 servings.
Scrumptious Minted Brownies (from America's Best Brand-Name Fix It Quick Comfort Food Cookbook)1 (21-ounce) package DUNCAN HINES Family Style Chewy Fudge Brownie Mix
1 egg
1/3 cup water
1/3 cup vegetable oil
48 chocolate creme de menthe candy wafers, divided
1. Preheat oven to 350 F Grease bottom only of 13X9 inch pan.
2. Combine brownie mix, egg, water, and oil in large bowl. Stir with spoon until well blended, about 50 strokes. Spread in prepared pan. Bake at 350 F for 25 minutes or until set. Place 30 candy wafers evenly over hot brownies. Let stand for 1 minute to melt. Spread candy wafers to frost brownies. Score frosting into 36 bars by running tip of knife through melted candy. (Do not cut through brownies.) Cut remaining 18 candy wafers in half lengthwise; place halves on each scored bar. Cool completely. cut into bars. Makes 36 brownies.
(It's been a long time since I added any recipes, plus it's been a long time since I've cooked anything other than TV dinners or spaghetti, but found these and they are absolutely wonderful, and more importantly, easy to make.)
